- 6 eggs
- 1//2 cup feta cheese
- 2 tbsp oil
- 1 medium-sized onion, diced
- ½ green bell pepper, chopped
- ½ red bell pepper, chopped
- ¼ tsp salt
- ½ tsp paprika
- ¼ tsp chili powder
- ½ tsp of black pepper
- 3 garlic cloves
- Crushed tomatoes
- 2 tbsp tomato paste
- Fresh cilantro, chopped
- Fresh parsley, chopped
- Heat oil in a stainless-steel pan. Add the bell pepper, onions, and garlic cloves to sauté them.
- Add in all the spices
- Pour in the tomatoes and mix everything. Simmer the sauce to bring out the flavors.
- Add the eggs into the mixture one by one
- Cover the pan and cook the eggs on low flame.
- Garnish with chopped parsley and cilantro. Also, add the crushed cheese for the topping.
